Gluten Free Japanese Curry (V,GF)
A few years ago I went on a business trip to Tokyo and spent a week being shown around by a man from Sri Lanka named Tilac. This man was the head chef for the Dutch embassy in Japan, and happened to have some time off to be our guide while his diplomat boss was home for vacation. As you can imagine, food was a core element during my stay there.
Gluten Free, Dairy Free Pizza Muffins
The fantastic news about pizza is that it’s so easy to adapt to a clean eating lifestyle, and actually make it healthy. You can enjoy all the flavor without having the bad stuff that makes you feel heavy and bloated afterwards. So now take a look at these these muffins. Nothing bad, loaded with veggies, and in fun muffin sizes that kids, and me, love to eat. It’s a perfect dish for your Friday night pizza cravings. Healthy pizza…what’s better than that!
Black Bean Soup (V,GF)
If beans are the magical fruit, black beans are the most magical of them all…in our humble opinion. They’re flavorful, versatile, and pack quite a wallop when it comes to nutrition. We love making soups and stews for their ability to store well, which makes getting through the work week a little easier since the […]
Mushroom Chickpea Burgers with Baked Sweet Potato Fries (V,GF)
Of course the the 4th put us in the mood for grilling and burgers this week. We’re not opposed to burgers from organic grass fed beef on occasion, but if you can make a burger that’s just as satisfying yet loaded with healthy ingredients, why not?
Raw Carrot & Tomato Soup (V,GF)
We’ve made this soup a couple times this last week, and I promise it is delicious. It’s a great way to combine fresh, healthy produce into a savory meal. If you’ve never tried raw soup, I highly recommend giving this a try. You probably have all the ingredients sitting in your fridge and cupboard already.
Tomato Bisque with Squash and Coconut (V,GF)
We continue Our Spring and Summer journey of lighter eating with an amazing tomato bisque. This recipe brings back memories of a favorite restaurant that was a common lunch-time destinations with coworkers. We went there just for the tomato bisque. It was only after I was able to find their ingredient list that it became a bit less tasty.
Sweet Potato Black Bean Enchiladas (V,GF)
Here’s a great dish to serve for a hearty meal. I love baking a dish of these on Sunday afternoon and eating the leftovers for lunch all week. Even your non-healthy eating friends will like this one. Some may wonder, “Where’s the chicken?”, but they’ll get over it.
Raw Veggie Collard Wraps (V,GF)
It’s getting hot outside, the farmer’s markets are filling up with beautiful veggies…it’s time to lighten up the menu and enjoy what the harvest is bringing us.
Roasted Ratatouille
This is a fancy title for a dish that is basically just a lot of veggies chopped up and roasted together. But in saying that, I don’t want to downplay how delicious this tastes. Roasting the veggies in olive oil with relatively few seasonings really brings out the flavor of these fresh summer veggies. Our […]
Kale Cashew Curry (V,GF)
If you haven’t been able to tell, we really like curry. And the amazing thing about it is how many different styles exist and flavors that can be created. The cashew butter gives a very nice texture to this version, and since it’s not very spicy, the flavor comes through with full force.
White Bean Stew with Mushrooms and Greens (V,GF)
Any recipe that starts with onions and garlic has to be good, right? Ok, I guess they’re not all good, but it’s not the onion or garlic’s fault, that’s for sure. Fennel was a new discovery for us last year, and for Brad especially, who loves the taste of black licorice, adding fennel to almost […]
The Best Gluten-Free Pizza Dough

When we stopped using gluten and dairy, we thought pizza was out forever. It’s not like pizza was something we ate all the time, but you have to admit, there is something magical about putting a bunch of awesome ingredients on top of a fantastic crust, picking up a warm slice with your hands, and […]
Carrot Coconut Curry Soup (V, GF)
Try saying that five times fast! Luckily, you can make it almost as fast. Almost. Once you’ve tried this soup, you’ll be repeating its name over and over, anxious to hurry back for another bowl. But you have to hurry back, because it will disappear fast too.
This is an easy recipe that takes about 30 minutes from start to finish and it’s hearty enough to make a meal of it.
