Sweet Potato Black Bean Enchiladas (V,GF)
Here’s a great dish to serve for a hearty meal. I love baking a dish of these on Sunday afternoon and eating the leftovers for lunch all week. Even your non-healthy eating friends will like this one. Some may wonder, “Where’s the chicken?”, but they’ll get over it.
Killer rhubarb
So I just read today that rhubarb leaves have toxic levels of oxalic acid. What are some of the symptoms of oxalic acid poisoning? Well…
Salmon and Vegetable Chowder (DF,GF)
Few things get me as excited as a good chowder. Soup is great, but sometimes you want something with a little more punch. I came across a traditional seafood chowder recipe that looked really good. So I experimented with it a few times to clean it up, and here’s what I got. It’s dairy and gluten free, and I don’t think anyone would be able to tell.
Roasted Butternut Squash Soup (V,GF)
We’re fans of butternut squash and find ways to use it fairly often. So we’ve had the fortune of sampling our fair share of butternut soup. We came across this recipe last year, and with a few adaptations to clean it up, it is by far our favorite.
Raw Hummus (V,GF)
During our “layover” in Utah we’ve had a chance to try out some of the things we learned from our new raw food friend in Costa Rica. Last week me made this hummus and it turned out AMAZING. We shared it with several people and the compliments and requests for the recipe kept rolling in. So, here it is. Enjoy!
Sweet Potato and Lentil Curry Casserole (V,GF)

This is an easy dinner, and one that the whole family will like. It’s also a good one to serve when you have your non-healthy eating oriented friends over for dinner. The curry ads a fun kick to the dish that makes this dish memorable.
Butternut Squash and Pumpkin Seed Spring Rolls (V,GF)

These are honestly the best spring rolls I’ve ever had. They are great anytime, but especially in the fall and winter when the butternut squash are in season.
Change the Oil Change the World?
Here’s my question. In a lifestyle where eating a home cooked meal using healthy ingredients is still the norm, and walking everywhere you want to go is just a part of life, why do most of the old people look so unhealthy?
Cranberry Chili Sauce (V,GF)

I absolutely love cranberries. Even if you don’t love them as much as me, you’re going to love this dipping sauce! It goes with almost anything.
Devilish Dark Chocolate Gluten Free Brownies (DF,GF)

Ok, any time you want to impress your non-healthy-eating-minded friends, this is the dessert to do the trick. Honestly, it was my husband who found this recipe and made it the first time. When he told me they were gluten free and vegan (he used egg replacer) I didn’t believe. These are good. They’re that good.
Breakfast Goulash
Ok, I’m actually a little nervous to keep writing about some of the things Kelli and I eat at our house. I’m sure to the average person they sound totally disgusting.
Indian Curry Stew (V, GF)

This dish feels like you’re making a good pot of stew, we’re just seasoning it a bit differently. If you don’t like spicy food, adjust the spices accordingly. As is, it’s probably rank as a medium on spiciness chart. Serve it over brown rice or quinoa (our personal favorite). It’s also a great one to […]
Baking with stevia, if you dare
Stevia can be used safely and effectively as a substitute for sugar in all recipes where sugar and low calorie sweeteners would be normally used. Stevia can be purchased in either powder or liquid form and can be found in flavors.
