Did you know that popcorn can actually be a healthy treat? It’s hard to find in the store that way, so you’ll probably have to make your own. Good thing it’s super easy.
Most corn in the U.S. is genetically modified. The first step is making sure you use organic popcorn. And to make it into a special treat, some unrefined sweetener with powerhouse foods like almonds and goji berries turn it into Superfood Popcorn.
Ingredients:
5-6 Cups popped organic popcorn (about 1/3 cup unpopped)
1 Cup sliced raw almonds
1 Cup dried goji berries
3/4 tsp ancho or othe chile powder (optional, for a little heat)
1/4 tsp sea salt
1 Cup coconut sugar
1/2 Cup water
Directions:
Add popcorn, almonds, and goji berries in a large stainless steel bowl.
Combine spices in a small bowl and set next to stove.
Combine sugar and water in a small saucepan. Cook over medium heat until sugar turns a deep-brown color, about 20 minutes.
Quickly stir in spices then pour caramel over popcorn, stirring quickly but carefully.
Let cool for just a few minutes and snack away.
