I am so excited to share this great recipe with you for a clean, non-dairy chocolate milk! Chocolate milk can be a great treat – a nice, smooth, cold energy boost. I personally love chocolate milk, and have missed it since I’ve been off dairy.
What makes me most excited and proud about this recipe is that I developed it 100% from my own creative mind . . which is pretty amazing considering I am a tax accountant by profession. 🙂
Ingredients:
5 Dates, pitted
1/3 cup Cashews
1/3 cup Hemp Seeds
2 1/2 cups cold water
2 Tbsp Tocotrienols (or Tocos – this is essentially a rice bran derivative)
2 tsp Soy Lecithin (organic – no GMOs here)
1/4 cup Cacoa Powder
2 tsp Vanilla
1/4 – 1/3 cup Coconut milk (full-fat from a can – not a carton)
1 tsp Honey (raw)
Directions:
Put the pitted dates into a mug and pour warm to boiling water over them (just enough to cover); let sit.
Put the cashews and hemp seeds in a high speed blender with 1 cup of very cold water; let soak for 1/2 hour.
Add the remaining ingredients to the blender, including the dates with their water, and blend on high for 45 seconds to 1 minute (until very smooth).
You can begin drinking immediately, but I’ve found this is better cold and seems best after sitting in the fridge for a day or two.
You may not have the tocotrienols or soy lecithin handy in your kitchen. The tocotrienols add creaminess and the soy lecithin helps keep this from separating (as well as adding some brain-boosting power). But your chocolate milk will be still turn out ok without them. Just increase the coconut milk to 1/3 or 1/2 cup.
