It’s true. Summer 2012 is going away. After a few weeks of plus 100 degree weather, the oncoming weather change is welcomed. But there’s still time for one last summer hurrah, and sitting outside eating a chocolate fudgesicle is the perfect way to bid farewell to summer.
And of course these are dairy free and have minimal sugar (the darker your preference for chocolate the better). Whether your kids enjoy these only you will know, but no one could blame you for making a batch all for yourself.
2 Tbs arrowroot powder
3 Cups almond or hemp milk, divided
10 Ounces dark chocolate bar, or chips
1 tsp vanilla
Directions:
In a medium bowl whisk together arrow root and 1/2 cup milk.
In a medium sauce pan, combine remaining milk and chocolate. Bring to a boil for 1 minute.
Remove from heat a pour in arrowroot mixture and the vanilla.
Cool a bit before pouring into molds.
Freeze until set, about 3 hours.
